Description: The restaurant industry has been among the hardest hit during the COVID crisis, especially in Michigan. The Food & Hospitality industry has scrambled to stay on course. This session will help throw light on a variety of tools that restaurateurs have utilized in their quest to survive and possibly thrive during this crisis.

Led by: Vivek Dalela, Ph.D., Seidman College Associate Professor of Marketing and Supply Chain Management

Bio:  Vivek Dalela is a faculty of marketing at the Seidman College of Business. His teaching and research interests are in the broad area of business-to-business relationships, focusing on supply chain management, international logistics, and professional selling. He is also currently focusing on the topic of sustainable business practices across disciplines. Vivek is also the founder and owner of a novel sustainable restaurant concept called First Bite which is based at downtown Ann Arbor. The business philosophy of First Bite has been summarized as Food 4.0 and the eatery has won several awards in the local community.
