Bio
Dr. MacQuillan serves as Program Director of the Applied Food and Nutrition program and an Associate Professor in the Clinical Dietetics graduate program. She was the first Registered Dietitian in the U.S. to earn the Certified Healthcare Simulation Educator credential from the Society for Simulation in Healthcare in 2019. She continues to actively teach using simulation-based education and conducts research on assessing competence and skill development using simulation.

Assessment of competence in clinical skills, Curriculum development in dietetics education, Maternal-Infant nutrition and breastfeeding, Advocacy for expansion of the role of the registered dietitian in health care.
