Dine like an Olympian

Campus Dining is celebrating the Olympic spirit with a special luncheon on August 15 to present menu items from the Athletes Village in Beijing.

Campus Dining supervisor, Mimi Smith is working to serve athletes and media members in Beijing and has passed along a number of menu items being served. Campus Dining is presenting this international menu, which includes:
  • Chinese Short Ribs
  • Cucumber Kimchee
  • Pork Schnitzel with Lemon Sauce
  • Butter Parsley Potatoes
  • Chick Pea Artichoke Feta Salad
  • (Elote) Mexican Corn Cobs
  • Indian Sweet Safron Couscous
  • Peach Crisp
The luncheon is Friday, August 15 from 11:30 a.m. - 1p.m. in the River Landing North Dining Room on the lower level of Kirkhof Center. The cost is $7 per person.
