RESEARCH INTERESTS
The transition to adulthood that occurs in college is an important period during which dietary patterns are established that can strongly influence lifelong health. Therefore, it is important to assess the campus food environment to identify barriers and facilitators to making healthful food choices to improve students’ diets. Our objective is to quantitatively analyze the quality of the campus food environment. This assessment includes an evaluation of signage and promotion of food choices, pricing, and the availability of fruits, vegetables, whole grains, and healthy entrees from campus dining outlets, campus stop-and-go stores, and a sampling of restaurants within a mile radius of the campus perimeter. The Nutrition Environment Measures Survey (NEMS) is used to quantitatively and consistently evaluate the food environment. In order to be certified to use this assessment tool, students will complete the NEMS online training provided by the University of Pennsylvania School of Medicine (which requires about 20 to 25 hours to complete) to become certified NEMS raters.
